4 medium zucchini
1 lb lean ground turkey
1 small onion chopped
1 TBL crushed garlic
Drain 1 tsp oregano leaves
1/2 tsp salt
1/4 tsp black pepper
1 16 oz can diced tomatoes
1/4 cup fresh basil leaves
1 cup grated reduced fat mozzarella cheese
Preheat oven to 375 degrees. Cut off stem end of zucchini and cut zucchini in half lengthwise. Scoop out seeds and pulp leaving 1/4 inch shell. In medium skillet brown turkey meat, onion, garlic and oregano. Drain off excess fat. Add chopped zucchini pulp, diced tomatoes, salt and pepper. Arrange zucchini shells in 13 x 9 baking dish. Spoon mixture into zucchini shells. Bake covered with foil for about 30 minutes. Remove foil and top with mozzarella cheese and fresh basil. Bake an additional 5 to 10 minutes. Let stand 5 to 10 minutes before serving.
Makes 6 to 8 servings.
