8 chicken fillets 3-4 oz each
2 Tbl olive oil
1 tsp chopped fresh rosemary
1 tsp chopped fresh thyme
1 tsp chopped fresh Italian parsley
salt and pepper
1 cup low fat mozzarella cheese shredded
8 tsp grated parmesan cheese
1 cup Healthy Marinara sauce. See recipe under Healthy Recipes.
Preheat oven to 350 degrees.
In a small bowl mix together olive oil, rosemary, thyme, parsley and salt and pepper. Brush olive oil mixture all over the chicken breast. Both sides. Heat a large non stick skillet to medium high heat. When skillet is hot add chicken cutlets and saute about 5 minutes on each side. Remove from heat and transfer to a 9 x 13 casserole dish sprayed with Pam. Top chicken cutlets with Healthy Marinara Sauce. Sprinkle with mozzarella cheese and top each cutlet with 1 tsp parmesan cheese. Bake 20 minutes until cheese melts and chicken is done. Enjoy.
