Italian Roasted Tomatoes

4 fresh whole tomatoes halved

8 tsp fresh or store bought pesto

8 tsp grated Parmesan

Balsamic vinegar

Preheat oven to 400 degrees

Place tomato halves on cookie sheet sprayed with Pam.  Top each tomato half with 1 tsp pesto, splash of balsamic vinegar and top with Parmesan cheese.  Bake for 18 to 20 minutes.  Serve as a vegetable side with chicken, fish or any lean meat.
