Grandma’s Meatballs

1 lb ground lean beef, turkey or chicken

1 egg

1/2 cup Progresso bread crumbs soaked in 1/2 cup nonfat or lowfat milk for about 10 minutes.

1/4 cup grated Parmesan cheese

1/2 tsp crushed garlic

1/4 cup fresh Italian Parsley finely chopped or 1 tsp dried parsley flakes

salt and pepper

Mix all ingredients gently in a large bow.  (Too much mixing can make meatballs tough).

Make into balls about the size of a golf ball.  Saute over medium heat in a pan sprayed with Pam cooking spray.  Turn meatballs occasionally so they do not stick to pan and cook thoroughly.  About 15 minutes into sauteing, add about 1/2 cup of water to pan, lower heat and simmer another 15 minutes till done.  Serve with Healthy Marinara Sauce and top with grated Parmesan Cheese and fresh chopped basil or by themselves.  Enjoy!
