4 scallions cut into 1 inch pieces
1/2 cup fresh cut cilantro leaves
4 garlic cloves, peeled
grated zest and juice of 1 lime
1 TBL water
2 tsp olive oil
2 tsp ground cumin
1 tsp paprika
1/2 tsp salt
1/4 tsp black pepper
4 boneless skinless chicken breast
thinly sliced scallions for garnished
Combine scallion pieces, cilantro, garlic, lime zest and juice, water, cumin, paprika, salt and pepper in a blender and process until course paste forms.
Place cilantro paste in a large zip lock bag. With a knife poke chicken breast all over. (This will allow marinade to seep inside breast). Place chicken in zip lock bag with cilantro paste and mix well. Refrigerate for at least 2 hours and up to 8 hours.
Spray grill with non stick spray. Preheat grill to medium. Place chicken on grill and cook turning occasionally until chicken is cooked through. About 30 minutes. Arrange chicken on platter, garnish with sliced scallions and lime wedges.
