Spinach and Mushroom Smothered Chicken Breast


6 oz bag raw spinach leaves

8 oz bag baby bella mushrooms sliced

1/2 white onion sliced

2 tsp crushed garlic

2 tsp salt

1/2 tst ground black pepper

3 sprigs fresh thyme or 1/2 tsp dried thyme

2 oz cream cheese softened

4 chicken breats

1/2 cup grated low fat mozzarella cheese.

Preheat oven to 350 degrees.  Spray a large saute pan with Pam cooking spray.  Over medium heat saute chicken breast about 4 minutes on each side.  Remove chicken and place in a 13 x 9 casserole dish sprayed with Pam.  To saute pan over medium heat add spinach, mushrooms, onions, garlic, thyme, salt and pepper.  Saute about 10 minutes or until spinach is wilted.  Add cream cheese and incorporate well into spinach mixture until it appears creamy.  Remove from heat and pour mixture over chicken breast.  Sprinkle with grated cheese and bake uncovered for 30 minutes.  Enjoy!

Makes 4 servings.
