
3 Boneless skinless chicken breast sliced
2 tsp olive oil
2 TBL crushed garlic
1 white onion chopped
3 celery stalks chopped
2 Roma tomatoes chopped
6 cups low sodium chicken broth
1/2 cup chopped fresh cilantro
1 TBL salt
1/2 tsp black pepper
1 jalapeño pepper deveined and seeded finely chopped
2 fresh limes
1 fresh avocado diced
In a large stock pot over medium heat add olive oil, onion, celery, and garlic. Sauté mixture about 5 minutes. Add sliced chicken breast and continue to sauté until chicken turns white. About 10 minutes. Add chicken stock, 1/4 cup fresh cilantro, tomatoes, salt, pepper and juice of 1 lime. Bring to boil and turn heat down and simmer about 45 minutes. Serve and garnish with more fresh lime, cilantro and diced jalapeño peppers.
Makes 4 servings.
