Grilled Salmon With Avocado Salsa

4- 6 oz pieces of fresh salmon  (You can also use this recipe and substitute chicken breast).

1 Tbl Chef Paul Prudhommes’s Magic Seasoning Blend

1 Tbl Olive oil

For Avocado Salsa

1 avocado diced

1/2 small onion diced into small pieces

juice of 2 fresh limes

1 – 2 Tbl finely chopped fresh cilantro

salt and pepper to taste

Heat grill to medium heat.  Make salsa by combining avocado, red onion, lime juice, fresh cilantro, salt and pepper.  Refrigerate.

Brush salmon with a little olive oil and sprinkle with Magic Seasoning Blend.  Place salmon on hot grill and grill about 5 minutes on each side turning only once until down.  Place grilled salmon on platter and top with avocado salsa.

Makes 4 servings.  Can also use avocado salsa on top of grilled chicken.
