Try something different for a summer salad.
4 heads of romain lettuce cut in half lengthwise
1 TBL Olive oil
1 red onion thinly sliced
4 TBL balsamic vinegar
1/2 cup low fat feta or goat cheese
Preheat grill. In skillet over medium heat with 2 tsp olive oil sauté red onions until tender and soft, about 20 minutes. Once tender add balsamic vinegar, lower heat to low and simmer for about 5 minutes.
Brush remaining olive oil on romaine lettuce halls. Set on grill and grill on each side about 5 minutes. Watch carefully so that they do not burn. Take off grill and place on platter. Top with sautéed onions and crumbled cheese. Enjoy with your favorite grilled meat.
